Erica Nicole’s Sunday Supper Recipe

Sunday April 18th, 2010 – Erica Nicole’s Sunday Supper Recipe As many of you know, I am from Atlanta, Georgia. And part of being from the South, you gotta know how to cook good food! So today for my Sunday Supper Recipe, I am going to share one of my all time favorite meals, Smothered Cheese Grits. Smothered Cheese Grits Grits – NOT quick grits Diced Kielbasa (I pack) Milk Diced Onion (1/3 onion) Cream Shrimp (I lb.) Chopped Chives (1 bunch) Old Bay Seasoning White Cheddar Havarti Olive Oil Pepper Butter (half stick) (Portions and measurements are up to you, but this should make quite a pot full) Sautee Chives, Kielbasa, onion, and Shrimp in Olive Oil and Old Bay Seasoning with Pepper. Cook Grits using milk and a little cream Before grits are done, about 80% done, add everything from the sauté pan Let simmer until everything blends together, usually just a few minutes. Shred cheeses into grits and constantly stir. Add half stick of butter and just a quick drip of olive oil. This keeps everything from globbing together. Eat right away, and ENJOY!

Erica Nicole’s Training Day Thursday

Thursday April 15, 2010 – Erica Nicole’s Training Day Thursday Many women complain each day about being out of shape, or feeling bloated. So my Training Day how to topic is all about fitness for women. I want to share with you a quick workout that takes less than 30 minutes! Do it each day, and I promise you WILL feel better! But before anything, you have to have a positive attitude that you can do this! Pick a time that you are at home and have about 30 minutes. For me, it is in the morning before I shower. We all have busy schedules and usually if something is put off, like working out, until the afternoon… it won’t get done. So I recommend in the morning once you wake up. First, start with 15 pushups. Then go for 15 complete sit ups. After that, do 30 lunges (that’s 15 per leg). It’s really that simple, just do 3 sets and you’re done! You will really be amazed, how after a couple days, you are feeling much better! And if you are in a hurry, then time yourself so you are pushing even harder!! This gets your heart rate going and that’s what we want! In addition to this daily workout, I watch what I eat and literally count the calories. You would be amazed at the difference it can make. This is a very important step to help your success! Good luck ladies, and let me know what you think!!

Erica Nicole’s Wild Idea Wednesday

Wednesday April 14, 2010 – Erica Nicole’s Wild Idea Wednesday Have you ever been skydiving, or thought about it? I have, and in fact it is on my Bucket List! For Wild Idea Wednesday, I want to blog about skydiving and hear your response! What is it about skydiving that attracts the attention of so many every year? Is it the natural “high” … (no punt intended) that you get when jumping out of a plane 15,000 feet in the air? Or is it just some crazy adventure that people just do? For me personally, it is something that is rare, and most people will never do in their lifetime. And being that you can see the world below, I am sure it is an amazing site to see! What do you think about this wild idea?
